Ingredients Required

• 1 ½ cups brown rice flour
• 1 ½ cups Millet flour
• ½ cup sugar
• 1 ½ cups water or soymilk
• 3 ripe bananas (mashed)
• 3 tbsp ground flax seeds
• 3 tsp baking powder
• 2 tsp cinnamon
• ½ tsp salt
• ½ tsp xanthan gum or guar gum
• ¾ cup chopped walnuts

Procedure to Prepare Gluten Free Vegan Banana Bread Recipe

Mix millet flour, rice flour, flax seed, cinnamon, guar gum (or xantham gum), baking powder, sugar, and salt in a large bowl. Blend in bananas and soymilk (or water); this can be whipped with a mixer for around one minute.

Pour the contents into a greased loaf pan or a square pan (8×8). Bake at 350°F for 45 to 60 minutes till it reaches the required consistency. Let it to cool in the pan itself. It is now ready to be sliced and served.

If you used a square pan, cut it into squares. Honey can be used as an alternate for brown sugar depending on the individual’s taste.
